KISIR (Bulgur Salad)

INGREDIENTS

. 7-8 scallion (green onion) finely diced

1/2 cup chopped flat leaf parsley

2 garlic (piece) diced

1 onion (medium size) diced

1 tablespoon tomato paste

1 tablespoon red paprika paste

2 cup  (boiling) water

1 teaspoon salt.

2 cup Bulgur. (fine)

1 tablespoon dry peppermint.

2 tablespoon crushed red pepper .

1 tablespoon crushed black pepper.

1/4 cup lemon juice.

1/4 cup olive oil.

3 tablespoon pomegranate syrup (optional)

1/2 teaspoon ground cumin (optional)

a few  fresh peppermint leaves  (optional) for decoration

PREPARATION

  • Mix the 1 tablespoon tomato paste and 1 tablespoon paprika paste in 1 cup boiled water and put it in the 2 cup bulgur, which is in a big bowl.
  • Put the other 1 cup boiled water with 1 teaspoon salt on it.
  • Mix all in the meantime and set the bulgur aside to soak  for 15 -til 20 minutes.
  • Prepare all other ingredients (scallion, parsley, onion, garlic, mint) in a bowl and mix them well.
  • Put the crushed red pepper, the black pepper, cumin,the lemon juice, the olive oil and the pomegranate syrup on the bulgur and mix all.

Serve the bulgur salad on washed lettuce leaves or with green salad.
